Elementary GTK theme

To install the latest Elementary GTK theme 2.1 in Ubuntu 10.10, use the following commands:
sudo add-apt-repository ppa:elementaryart/elementarydesktop
sudo apt-get update
sudo apt-get install elementary-theme

For other Ubuntu versions you can download the .deb.

You can also download the latest Elementary Icon theme (2.5) via Deviantart - it was released in October but unfortunately it's not available in the PPA.

How to revert to the old grey panel instead of the new dark panel

To use the old panel style, press ALT + F2 and enter:
gksu gedit /usr/share/themes/elementary/gtk-2.0/gtkrc

Then at the bottom of the file, replace:
include "Apps/panel-dark.rc"
include "Apps/panel.rc"

Download Elementary Theme 2.1 for other Linux distributions.
